2 medium head broccoli, chopped into florets
1 onion, chopped
2 clove of garlic, chopped
2 cups frozen peas
1 cup milk of choice (oat milk was used here)
4 cups vegetable broth + more if necessary
salt & pepper, to taste
for serving: Chopped parsley, lemon zest, cream, optional for serving (oat cream was used here)
Heat 1 tbsp olive oil in a large stock pot and add the onion and garlic and cook for 3-5 miuntes, or until softened. Add broccoli and broth and bring to a boil. Reduce heat and simmer for 30 minutes. Add frozen green peas and cook until softened, about 2 minutes.
Let soup cool slightly, then add to a high speed blender and process until smooth. Add soup back to pot and stir in milk of choice. Season with salt and pepper. Top with chopped parsley, lemon zest and cream.
