You can make a latke out of almost anything as evidenced by the feedfeed community (Brussels Sprout Latkes, anyone?)!
If you'd prefer to go traditional, here's our favorite tip:
For a crunchy latke-wrap the grated potatoes in a kitchen towel & squeeze out as much liquid as possible before combining the potatoes with the egg yolk, flour, salt and pepper. If you are of the persuasion to add onion, dice and sweat them first and cool before adding them to the mixture.
