Celebrating 8 Nights of Hannukah

Celebrate the miracle of the festival of lights with 8 of our favorite festive Hanukkah recipes.

A Note From Julie Resnick

It’s time to celebrate the festival of lights! Whether you’re making latkes, brisket, kugel or even fried chicken, we have tons of recipes to help you celebrate each of the 8 nights in a fun and festive way. Traditional Hanukkah food is usually fried because the holiday is a celebration of the miracle that took place when the Jews were left with only enough oil to burn for one night, but it lasted 8.

Fried Shallot Potato Kugel

A Note From Julie Resnick

We love this recipe because it guarantees a crispy kugel by cleverly heating oil in the baking dish first and adding the potatoes after, creating a crispy exterior, and creamy middle.

Rosemary Brined Buttermilk Fried Chicken

By Michael @ruhlman. Seriously, the best fried chicken I've ever had. The chicken is incredibly moist, tender, and flavorful from resting overnight in a salty brine made with onions, rosemary, lemon. The crust is so perfectly flakey, with spicy hints of cayenne and paprika. The pieces get finished with salt, lemon zest, and fried rosemary. This must make recipe from Genius Recipes, by Kristen Miglore, is the type of chicken that causes your eyes to roll back with delight.

This is as close to fried chicken perfection as it gets. The brine is key here. If you keep kosher, try a standard salt and water brine.
