Once you sleep overnight in a jar full of flavor infused oats you will never go back to your bed. Who wouldn't want to sleep on a thick, fluffy, cozy oat mattress? I know I do, especially when life is hectic and time isn't always on our side. Luckily you can plan ahead and prepare a quick and easy recipe the night before so all you have to do is grab n go in the morning! There are so many different elements you can add to overnight oats such as fruit, cinnamon, yogurt, protein, milk, nut butters, chocolate, oh my! Come aboard this bOAT ride and let me take you for a cruise through Flavor Town.

Pomegranate season is here! Simple Overnight Oats w fresh strawberries + pomegranate seeds. I’m a firm believer in eating what’s in season and also eating according to season. When the weather is warm I like to eat cooling foods like fresh fruits and vegetables. And when the weather is cool then I eat warming foods like cooked brown rice, roasted vegetables and hearty soups. The city of angels is notorious for the year long summer days but even we get cool days… Sometimes… Like today! It’s raining. So I packed organic brown rice, black beans and baked tofu for lunch. However, it’s supposed to heat up again by the end of the week. So I’ll switch it back up to them cooling foods. Thanks for sticking with me.

It was a tropical breakfast for us, even though the temperature is positively frigid. I love overnight oats now. Soaking overnight renders them more digestible by reducing their acid content and they are extremely easy to prep! I topped half a cup of oats with a key lime smoothie layer, coconut yogurt, key lime juice and spinach, sweetened a bit with pears. I love the intense flavor of key lime juice, so this breakfast was memorable! Thank you to my wonderful friend Janine @nutsandblueberries featuring me this week.
