New Orleans offers something for every palate ... a steaming bowl of gumbo or jambalaya, the classic po’boy or muffuletta, beignets, pralines, king cakes, crawfish or the little known yakamein, every dish satisfies, inspires, and keep you coming back for more. One of the most amazing things about living in this city is that I get to be a part of this food culture that is rich in history, and as varied as the tourists who flock here and the locals who call it home.

I made a big pot of Cajun gumbo using home-grown chicken and duck. Started with a good, rich, dark roux and used some smoked chicken stock and organ meats to add a smokey earthiness. I claim no Cajun ancestry but do have a tremendous appreciation for the cuisine. I've gleaned whatever nuggets of Cajun cooking wisdom I can from the likes of Ramsey Elizabeth, Bryan Kayser, Lucius Fontenot, Zoë Huval, Ryan Guillory and others.

Sazerac

Cocktail If The Day (because it's always cocktail hour somewhere in the world). In honour of Fat Tuesday, we're heading to New Orleans and hitting up the classics with A Sazerac. 2 oz rye 1/2 oz simple syrup 2 dashes of Peychaud's bitters Absinthe rinse Add an absinthe rinse to a chilled glass. Stir the rest of the ingredients over ice and strain into the aforementioned glass. Garnish with a lemon twist. Recipe taken from @imbibe.
