Okra… Ah my favourite vegetable just because not only is it delicious but because it is also so versatile. Pickle it, use it in salads, deep fry it or just cook with some yummy spices. Not so well known in Europe but they are catching on fast! It is only beautiful to look at (it is after all also elegantly called lady’s fingers) but is highly nutritious to eat as it is rich in vitamin A, K and is a very good source of folates AND low on calories. So yay! for okra.
