Spicy Gumbo With Brown Rice And Greens

nbd just SPICY WEEKEND GUMBO. Loaded with shrimp and andouille sausage, just creamy enough to serve over brown rice with a side of greens. There's a small amount of obsessing going on over here. Perks: it's not hard to make // it's super flexible to any veggies you want to throw in, or so you guys tell me on snapchat. and I mean you don't *have* to make it on the weekend, but all it really wants is to just chill out for a few hours on a low simmer, and if you do it today, you're going to thank yourself all week highly encouraged end-of-weekend activity.

Smoked Chicken And Duck Cajun Gumbo With Andouille Sausage

I made a big pot of Cajun gumbo using home-grown chicken and duck. Started with a good, rich, dark roux and used some smoked chicken stock and organ meats to add a smokey earthiness. I claim no Cajun ancestry but do have a tremendous appreciation for the cuisine. I've gleaned whatever nuggets of Cajun cooking wisdom I can from the likes of Ramsey Elizabeth, Bryan Kayser, Lucius Fontenot, Zoë Huval, Ryan Guillory and others.
