There is nothing more satisfying to me than visiting my local fishmonger, buying locally and ethically sourced in-season seafood and preparing it later that day to eat. I am endlessly intrigued by the creative opportunities presented by seafood. It’s such a versatile type of protein to work with that be rather laid back and modest like an easy weeknight fish pocket or prawn stew to something quite fancy, bold and celebratory such as Lobster Mac n Cheese. Either way, when you are working with fresh seafood you want it to be the star of the show, only adding a few simple ingredients to help turn it into a meal.
