Now not to get too preachy here, but its kind of the least we can do. If we're gonna eat stuff, we may as well eat stuff that's sustainable. Happily when it comes to seafood, sustainable pretty much always means delicious. Get to know your fish guy; find out where your fish is coming from;go local; experiment. So go ahead-- fry an oyster, dredge a blowfish, sear a butterfish, smoke a bluefish, pop that jar of anchovies, pickle that herring, bake a sea bream. Keep away from the usual suspects and for heaven's sake please don't touch that farm raised shrimp from halfway around the world.

Please take a moment to support an amazing @kickstarter campaign (click here) that was just launched by a trailblazing organization, @DockToDish, that is close to our hearts, as they continue pioneering ways to protect the environment and nourish communities of people all at the same time. One of the environmental causes that deserves everyone’s attention is the issue of creating a Sustainable Seafood Ecosystem. Years ago when we started feedfeed we met at the Montauk docks with a friend, Sean Barrett, to chat about a company he started @DocktoDish as the first Restaurant Supported Fishery in the country. The concept is genius, enlist a small fleet of artisanal fishermen using the most sustainable harvesting practices, and encourage them to focus exclusively on species of fish that are most abundant and in season—then connect them in a "CSA for fish" with the most talented local chefs. Besides redefining the rules of sustainable seafood, the program also drastically lowers the typical carbon footprint of the seafood industry by capping their delivery radius to 150 miles. Transparency in the supply chain is the Dock to Dish mission and #knowyourfisherman became a real possibility for Dock To Dish members; we have been luck enough to experience first hand the beauty of knowing who caught our fish and how they did it. Pioneering chefs across the country have signed on and helped advance the @DockToDish movement by embracing a model based on accepting the local fish that are available in the ecosystem, rather than demanding popular and exotic species from distant oceans where fish stocks are now depleted and where there is often no regulation of foreign fishing industries.
