Shrimp and grits can be made quickly, and deliciously.

RECIPE:
Ingredients

For the shrimp:

6 large shrimps peeled and deveined (reserve shells for stock)
1/2 stalk of celery finely diced
1/4 small onion finely diced
1/4 green pepper finely diced
1 tbsp Cajun seasoning
1 tbsp butter

For the grits:

1 cup stone-ground grits
1 cup whole milk
4 cups water
1/2 cup parmesan cheese freshly grated

1. In a saucepan, bring water and milk to boil, add grits and mix occasionally until thickened. Add parmesan cheese, salt and pepper to taste, set aside.
2. In another saucepan, bring a cup of water to boil, add shrimp shells and bring to boil again.
3. Season shrimp with Cajun seasoning and set side.
4. Heat up a cast-iron skillet and melt butter, sauté celery, onion, and celery until translucent. Add shrimp and cook for 2-3 minutes, add shrimp stock and cook until reduced, shrimp is opaque. Spoon over prepared grits and serve with freshly grated parmesan cheese and red pepper flakes for garnish.
