For the garlic spiced shrimp

ingredients

  • 2 tablespoons butter or olive oil
  • 2 pounds jumbo shrimp, raw, peeled, deveined, and tail on
  • 1 teaspoon garlic and herb spice
  • salt and pepper, to taste

For the vodka sauce

ingredients

  • 1/4 teaspoon red pepper flakes
  • 4 cups crushed tomatoes in tomato puree or tomato sauce
  • 1/4 cup vodka
  • 1 cup heavy whipping cream
  • 1/2 cup Parmigiano Reggiano PDO, plus more for serving
  • 2 tablespoons chives, finely chopped, for garnish
  • 1 pound pasta, cooked according to the package instructions

Method

  • Step 1

    In a skillet, melt butter on medium heat. Next add shrimp and season with garlic and herb spice, salt and pepper, to taste. Cook until shrimp is cooked thru, stirring with a wooden spoon a few times, about 3-5 minutes (you might want to cook in batches of 2 so shrimp is not overcrowding the skillet).

  • Step 2

    Transfer shrimp onto a plate using tongs, leave the butter drippings in the skillet, set shrimp aside. Next into the same skillet with butter drippings add red crushed pepper flakes, sauté for 30 seconds, stirring few times.

  • Step 3

    After, add crushed tomatoes and vodka, bring it to a simmer and cook for 8-10 minutes or until alcohol is cooked off, stirring continuously.

  • Step 4

    Next, stir in heavy whipping cream and Parmigiano Reggiano PDO. Cook for 1 minute or until the cheese melts.

  • Step 5

    Add pasta and shrimp and heat it through. Remove from the heat and serve with finely grated cheese and finely chopped chives. Enjoy!
