Easy Vegan Greens and Beans Pasta

ingredients
- 1 10 ounce package Cascadian Farm Organic Cut Frozen Spinach
- 3 garlic cloves, peeled
- 1/4 cup olive oil, plus more for serving
- 1 teaspoon lemon juice
- 1 cup short pasta (such as orecchiette)
- Kosher salt and pepper, to taste
- 1 can white beans, drained and rinsed
Method
Step 1
Bring a medium saucepan of salted water to a boil. Add frozen spinach. Cook for 3-4 minutes, until defrosted, remove from water with tongs, squeezing excess water out and transferring to a food processor.
Step 2
Add garlic, olive oil, lemon juice and salt and pepper (to taste) to the food processor. Blend until all ingredients are incorporated and smooth. If the sauce feels thick, add a few spoonfuls of cooking water and continue blending.
Step 3
On the stove, return pot of salted water to a boil. Add pasta, and cook until al date. Drain, reserving 1 cup cooking liquid.
Step 4
Return pasta to pot, stirring in spinach sauce and beans. Add ½ cup cooking liquid, and cook on low heat, to encourage pasta to stick to sauce. Season with salt and pepper.
