- 1 tablespoon olive oil
- 1 small onion, diced
- 1 green bell pepper, seeded and diced
- 4 garlic cloves, minced
- 1 teaspoon paprika
- 1 teaspoon cumin
- Kosher salt and freshly ground black pepper, to taste
- 2 (14.5 ounce) cans Muir Glen Organic Fire Roasted Petite Diced Green Tomatoes
- 6 large eggs
- 1/4 cup crumbled feta
- Fresh cilantro, roughly chopped
- Bread (optional), for serving
- Hot sauce (optional), for serving
Method
Step 1
Drizzle olive oil into a pan and heat over medium. Add onions and bell peppers and cook on medium for about 5 minutes until soft and the onions are translucent.
Step 2
Add garlic along with paprika and cumin and a generous pinch of salt and pepper. Cook for another minute or so before pouring in Muir Glen diced green tomatoes (including juice).
Step 3
Mix well and bring to a strong simmer. Then use a spoon to form 6 small wells. Into each well crack in an egg. Then cover the pan with a lid and cook for 3-5 minutes until the eggs have set.
Step 4
Remove from the heat and top with crumbled feta and fresh cilantro. Serve with bread and hot sauce if desired.
