Making a Spanish Tortilla

If you’ve never had a Spanish Tortilla, widely considered a national dish of Spain, it’s similar to a frittata in that it’s a crustless baked egg dish. It’s filled with sliced onions and potatoes, which are sautéed in a generous helping of Filippo Berio Olive Oil

This is the perfect oil to use for this dish. Its mild taste allows the eggs and potatoes to shine, while also ensuring the (traditionally pesky) eggs don’t stick to the pan during cooking.

For the potatoes, I find it best to cut them on a mandolin, just to ensure an even thickness. If you don’t have a mandolin, not a problem, just use the sharpest knife you have on hand. Once the potatoes have been sliced, add 1 cup of Filippo Berio Olive Oil to an 8-10-inch nonstick skillet on medium heat. Add 1 sliced onion and cook until the potatoes are tender, but not falling apart.
Remove them from the skillet, into a metal colander set over top of a heat proof bowl. In a large bowl, beat 8 eggs and season with salt. Add potatoes and gently stir to combine, invert a plate over the bowl and allow to sit for 10-15 minutes. Preheat your oven's broiler.

Add 2 tablespoons of the reserved oil back into the skillet on medium heat. Then add the egg and potato mixture back to the skillet and cook for 6-8 minutes, or until most of the egg mixture has set. Then pop your pan into the oven and broil until the top has set, 2-3 minutes. Remove from the oven. 

Invert a plate on top of the skillet and carefully flip the skillet, releasing the tortilla onto the plate. Let sit at room temperature until it’s cooled to a bit, then slice and serve!
