A Note From Lena Vergnes

Have it for breakfast, lunch, brunch, or dinner, Frittatas are a great way to use up whatever you have in the fridge. All you need are eggs, some mixed veggies like mushrooms, spinach, onions, etc., some sort of cheese, and if you're feeling fancy, some bacon or prosciutto. For the best results preheat a cast iron skillet in the oven before adding in the egg mixture, then let it sit atop the stove on a low heat for a few minutes before finishing it up in the oven!
