Sunday Herby Tomato Soup with Fresh Burrata

THE GROCERY LIST
(the must-haves!)

2 lbs bacon
1 lb shrimp, peeled and deveined (use frozen if buying in advance)
¼ lb  deli sliced roasted chicken breast
¼ lb deli sliced colby cheese
¼ lb deli sliced roasted turkey
¼ lb sliced salami
¼ lb sliced Soppressata
2 red roma or beefsteak tomatoes
1 pint cherry or grape tomatoes
1 bunch fresh basil
1 bunch fresh thyme
1 bunch fresh oregano
1 bunch fresh rosemary
1 bunch fresh parsley
1 bunch fresh chives
1 bunch scallions
1 bunch cilantro
1 pound bag of carrots
1 bunch radishes
2 yellow onions
3-4 small zucchini
1 head iceberg lettuce
1 ½ lbs baby yukon gold potatoes
1 (10 oz) bag frozen cauliflower rice
1 (6 oz) pack shishito peppers
3 ripe avocados
2 red bell peppers,
1 yellow bell pepper
1 jalapeño
1 (6 ounce) can tomato paste
1 quart chicken stock
1 (28 oz) can whole peeled tomatoes
1 (10 oz) jar Calabrian chiles
1 (16 oz) jar mayonnaise 
1 box cake flour
Rainbow sprinkles
1 (8 oz) container prepared pesto
1 (8 oz) ball burrata cheese (or fresh mozzarella)
1 (8 oz) container fresh mozzarella pearls
1 (8 oz) container grated Parmesan cheese
1 pint sour cream
1 (8 oz) container crumbled cotija cheese
4 slices of rye bread (or bread of your choice)
8 (6-inch) tostada shells
 

PANTRY ESSENTIALS

Soup season is in full effect! Kick it off with this herbaceous tomato number. We should mention there is bacon in there...yum!

Feedfeed Tip Tomato soup can sometimes be a bit too acidic. Once the soup has been pureed give it a taste to see what it's lacking. It's often sweetness so feel free to stir in a tablespoon or so of honey to balance things out.
