✨GIVEAWAY! ✨I'm really excited to partner with @dnxbar to give away a sample pack to TWO lucky winners here! I always try to keep up a few easy and healthful food options on hand, but DNX bars aren't just convenient, they're super clean and really tasty too. I love all the variety - They mix up the flavors with ingredients like fennel, pecan, and coconut. Here I sliced their mexican spices bar to throw together a big paleo taco salad, no cooking required (time saver!). I also keep a few bars in my purse and take them wherever I'm headed, because even my one year old likes to snack on the sweet potato bars while I'm huffing and puffing and pushing him in the jogger. 😂

I make a healthier version of pancakes about once a week to keep from burning out on savory eggs and veggies breakfasts. Duck tacos for #tacotuesday! 👌🏼My friends at @tastyduck sent me some of their all natural and antibiotic-free Long Island heritage breed duck to cook with, and man, it was such a treat. I grew up on LI, and let me tell you, we're very proud of our duck there (it's even the name of the minor league baseball team, and if you still don't believe me, google The Big Duck). 🦆 Duck really is super family friendly to make and eat -- Here I rendered some of the fat (and saved it for roasted veggies later!) as it slow cooked in a Dutch oven for about 2 1/2 hours. The meat comes out super tender with a really nice rich flavor. Pineapple salsa lightened everything up a touch, then with some smashed avocado and freshly squeezed lime, we're all over here in a happy stuffed-full-of-taco coma.
