"leftovers (brown butter bourbon chess pie with unsweetened whipped cream). filling recipe (since everyone has been asking) -> - 1 cup vanilla sugar (it’s pretty much the only granulated sugar I have on hand these days - old vanilla beans/pods + sugar + time) - 1/2 cup brown sugar - 3-4 eggs (depending on whether you want a softer more gooey pie or something a little more set) - 1 stick butter, browned and cooled slightly
- large pinch of salt - 2 tablespoons bourbon - 1 1/2 tablespoons coarse cornmeal - 2 teaspoons vanilla
whisk together. pour into blind baked shell (I used pie dough, but it could be whatever you prefer). 325 degrees for 35 minutes (slight jiggle in the center)."
