"leftovers (brown butter bourbon chess pie with unsweetened whipped cream). filling recipe (since everyone has been asking) -> - 1 cup vanilla sugar (it’s pretty much the only granulated sugar I have on hand these days - old vanilla beans/pods + sugar + time) - 1/2 cup brown sugar - 3-4 eggs (depending on whether you want a softer more gooey pie or something a little more set) - 1 stick butter, browned and cooled slightly - large pinch of salt - 2 tablespoons bourbon - 1 1/2 tablespoons coarse cornmeal - 2 teaspoons vanilla whisk together. pour into blind baked shell (I used pie dough, but it could be whatever you prefer). 325 degrees for 35 minutes (slight jiggle in the center)."

ingredients

  • 1 cup vanilla sugar
  • 1/2 cup brown sugar
  • 3-4 eggs, use 3 if you want a softer more gooey pie or 4 if you want something a little more set
  • 1 stick unsalted butter, browned and slightly cooled
  • 2 tablespoons bourbon
  • 1 1/2 tablespoons coarse cornmeal
  • 2 teaspoons vanilla extract
  • large pinch salt
  • 1 par baked pie crust

Method

  • Step 1

    Preheat oven to 325ºF.

  • Step 2

    In a large bowl, whisk together the sugars, eggs, butter, bourbon, cornmeal, vanilla extract and salt. Pour into pie shell.

  • Step 3

    Bake for 35 minutes, until there is a slight jiggle in the center but the edges are set.
