Makhana/fox nuts are dried lotus seeds. In North India they're commonly roasted in ghee, seasoned with chaat masala, black salt & chilli powder and eaten as a snack. If made well, they're delicious and a decidedly healthier snack option owing to their high protein, fiber & mineral content. They also have a low glycemic index and are low in sodium. My son loves them and I'm quite happy allowing him to munch on these instead of store-bought potato chips or microwave popcorn. I made them a little differently yesterday and they turned out very well. Prepared this way, they'd be good to serve with drinks too. Am sharing the recipe for anyone who'd like to try.
