This concept came to me out of necessity when I realized, halfway through cooking dinner one night, that I was out of breadcrumbs and all I had was granola. Now I make this dish BECAUSE it uses granola. Just swap out traditional panko breadcrumbs for Cascadian Farm Oats and Honey Granola for an unbeatable crunch and added fiber. It’s a satisfying salmon recipe that’s perfect to whip up for lunch or dinner.

Cut Matters: Make sure to buy a center-cut salmon filet for this recipe. They are often sold skin-on or skinless, and are de-boned which is CRUCIAL. You may still find an occasional pinbone, but that’s nothing in comparison to the wishbone shaped salmon steaks that are full of small bones.
A Note on Mustard: I used Dijon mustard in my original recipe, but if you’re more of a whole grain mustard person you can swap that in 1:1 in the recipe. If you all you have is spicy mustard or brown mustard, no worries. Use slightly less than the recipe calls for and add a little more honey to balance out the stronger mustard flavor and spiciness.
Fresh Herbs: You can use fresh rosemary or sage in this recipe in place of the thyme. If you only have dried herbs that’s fine too, just use slightly more than the recipe calls for to make up for their decreased potency.

- 2 tablespoons Dijon mustard
- 1 tablespoon honey
- 1 tablespoon olive oil, plus more for drizzling
- 1 garlic clove, finely grated
- 1 teaspoon fresh thyme, roughly chopped
- 3/4 teaspoon kosher salt
- Flaky sea salt
- Fresh lemon wedges, for serving

Step 1
Preheat oven to 400F degrees. Line a baking dish or small sheet pan with a piece of parchment paper or aluminum foil and drizzle lightly with olive oil.
Step 2
Pulse Cascadian Farm Oats and Honey Granola a few times in a food processor to break up any larger clusters.
Make the Honey Mustard Sauce and Crust the Salmon
Step 1
Add olive oil, honey, Dijon mustard, grated garlic, and chopped thyme or rosemary to a small bowl and whisk to combine. Lay salmon onto the prepared baking dish, then spoon the honey mustard mixture overtop and spread to coat evenly. Sprinkle the granola over the honey mustard, pressing lightly to adhere. Drizzle with a little more olive oil.
Bake and Serve
Step 1
Bake the salmon for 20 minutes, until salmon reaches an internal temperature of 125F degrees for medium. For medium-well, bake for 25 minutes for an internal temperature of 145F degrees.
Step 2
Serve salmon with a little flaky sea salt and squeeze of fresh lemon.
