ingredients
- 1-2 fennel bulbs
- 1 lemon, zested and juiced
- 1 orange, zested and juiced
- 2 tablespoons olive oil
- 2 tablespoons fresh dill, chopped
- 2 teaspoons honey
- 1/4 teaspoon salt
Method
Step 1
Wash fennel bulbs, remove the core and thinly shave using a sharp knife or a mandolin
Step 2
In a small bowl whisk the olive oil, salt, honey, zest and juice from the orange and lemon.
Step 3
Toss the fennel with the dressing and allow it to marinate for 15-30 min in the fridge.
Step 4
Leftovers can be stored in the fridge for up to 3 days.
Step 5
Enjoy the slaw over greens or on its own.
