These Crispy Rice Paper Samosas are SO tasty and surprisingly quick and easy to make. They’re gluten-free, vegan, and packed with protein thanks to the tofu. Since going gluten-free last year, I hadn't had a proper samosa—until now—and I genuinely can’t believe how samosa-y they taste. Crunchy on the outside, flavorful and cozy on the inside. You’re going to love them!

ingredients

For the samosas:

  • 1 medium-large potato, peeled and chopped
  • 1 tablespoon olive oil, plus more for brushing
  • 1 teaspoon cumin seeds
  • 1 teaspoon freshly grated ginger
  • 2 garlic cloves, minced
  • 1/2 small onion, finely diced
  • 1/4 teaspoon turmeric
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon ground coriander
  • 1 teaspoon curry powder
  • Kosher salt, to taste
  • Freshly ground black pepper, to taste
  • 200 grams firm tofu, crumbled
  • 2/3 cup fresh or frozen peas
  • 8 - 10 rice paper sheets

For the yogurt dip:

  • 1/3 cup plain unsweetened yogurt (use dairy-free if needed)
  • Juice of 1/2 lemon
  • Handful of fresh coriander
  • 1 small garlic clove
  • Pinch of kosher salt

Method

  • Step 1

    Boil the chopped potato in salted water until fork-tender. Drain and set aside.

  • Step 2

    Preheat to 400°F and line a baking tray with parchment paper.

  • Step 3

    Heat olive oil in a pan over medium heat.

  • Step 4

    Toast cumin seeds for 1–2 minutes until fragrant. Add ginger and garlic; cook for 1–2 minutes more. Stir in the onion and cook until soft (3–4 minutes).

  • Step 5

    Add turmeric, chili powder, coriander powder, and curry powder. Mix well.

  • Step 6

    Crumble tofu into the pan and cook for 4–5 minutes to reduce moisture. Lightly mash in the cooked potato, then stir in peas. Season with salt and pepper to taste. Remove from heat.

  • Step 7

    Briefly run one rice paper sheet under water (~10 seconds), then lay flat on a clean surface to soften slightly. Fold the sides in to create straight edges.

  • Step 8

    Add a heaping tablespoon of filling, then fold into a triangle shape (see video or reference guide). Repeat until the filling is used up.

  • Step 9

    Place samosas on the baking tray. Brush both sides with olive oil. Bake for 20 minutes, flipping halfway through, until golden and crisp.

  • Step 10

    Blend all yogurt dip ingredients in a small blender or food processor until smooth and creamy.

  • Step 11

    Enjoy samosas warm with the dip!
