ingredients

  • 3 tablespoons olive oil
  • 2 medium carrots, peeled and diced
  • 1 small white onion, diced
  • 2 stalks of celery, diced
  • 3 garlic cloves, minced
  • 2 tablespoons tomato paste
  • 1 teaspoon dried oregano
  • 1/2 pound Italian sausage
  • 1/2 pound ground beef
  • 3/4 cup red wine
  • 1/2 cup whole milk
  • 2 (14.5 oz can) Muir Glen Diced Tomatoes
  • 1 teaspoon kosher salt
  • 1/2 teaspoon ground black pepper
  • 1 pound pizza dough, cut in half
  • 8 oz shredded mozzarella cheese
  • Fresh basil, for garnish
  • Grated Parmesan cheese, for garnish

Method

  • Step 1

Drizzle a Dutch oven with olive oil and bring up to medium heat.

  • Step 2

Add chopped carrots, celery and onion and sauté until softened, about 4-5 minutes.

  • Step 3

Add the garlic and sauté for another minute until fragrant.

  • Step 4

Add the tomato paste and dried oregano and stir the paste into the oil for another minute.

  • Step 5

Add the ground sausage and ground beef and use a sturdy spoon to break up the meat. Continue cooking the ground meat until caramelized and there is a nice char on the meat and until the meat is cooked through.

  • Step 6

Pour the red wine in and use a sturdy spatula to scrape any meaty bite from the bottom and allow the wine to reduce for 1-2 minutes.

  • Step 7

Once the wine is reduced, pour the milk in and give everything a stir, so the milk reduces slightly and creates a creamy texture.

  • Step 8

Add Muir Glen diced tomatoes and season with salt and pepper. Give the sauce a good stir and let simmer for 20-30 minutes until thickened.

  • Step 9

Meanwhile, preheat your oven to 500 degrees Fahrenheit and roll out each of the pizza doughs to a 10-12 inch circle.

  • Step 10

Once the sauce has thickened, spread ½-3/4 cup worth of sauce onto the dough and top with shredded mozzarella cheese.

  • Step 11

Place the pizza onto a pizza stone or baking sheet and cook the pizza until the crust is perfectly golden brown and cheese has melted, about 7-8. Minutes.

  • Step 12

Once done, remove from the oven and finish with grated Parmesan cheese and fresh basil.
