Recipe

  • 1/ 2 cup chia seeds
  • 1 1/ 2 cups unflavored oat milk
  • 1 tablespoon organic honey
  • 1/ 2 cup plain yogurt
  • 1/ 3 cup granola

Method

  • Step 1

    In a small bowl, combine chia seeds, oat milk and honey. Using a whisk, stir to combine and until it is a smooth consistency. Feel free to add a little more oat milk if you prefer a thinner consistency.

  • Step 2

    Cover and refrigerate the chia seed mixture overnight, or at least 3-5 hours for it to become a pudding-like texture. It may be helpful to go back and give the mixture another stir after about 30-40 minutes of refrigeration. This will help prevent the chia seeds from clumping on the top.

  • Step 3

    Chia seed pudding is best served chilled, topped with yogurt, granola or any kind of fruit, (I used blood orange , lime and some lime zest).
