Happy New Year! Kick off 2019 with some veggie-focused, yet satisfying meals. Plus we threw in a quick and easy pasta because life is all about balance, right?!

THE GROCERY LIST
(the must-haves!)

2 pounds sweet potatoes
1 pound parsnips
1 bunch cilantro
1 large knob fresh ginger
1 head garlic
1 jalapeño
6 limes
1 bunch fresh parsley
2 onions
1 head cauliflower
1 bunch broccolini
8 ounces kalamata olives
8 ounces brown lentils
1 can full fat coconut milk
2 quarts stock in a box
1 pound rice
1 pound sweet potatoes
1 bunch cilantro
1 small jar red curry paste
1 dozen eggs
8 ounces prepared pesto
1 pound pasta of choice
2 (5 ounce) cans oil-packed tuna 
1 (3 ounce) jar capers
1 (7 ounce) jar sun dried tomatoes
1 (6 ounce) bag cacao butter chunks
1 (16 ounce) jar macadamia nut butter (or sub with almond butter)
1 hunk pecorino romano cheese

 

PANTRY ESSENTIALS
(things we assume you have,
but if not, stock up!)

Olive oil
Coconut oil
Salt
Pepper
Curry powder
Crushed red pepper
Garlic powder
Garam masala
Dried thyme
Dried oregano
Dried rosemary
Dried Italian seasoning
1 vanilla bean (or use vanilla extract)
Almond butter
Unsweetened almond milk
Coconut flour
Honey or maple syrup
Panko bread crumbs
Dry white wine (or replace with chicken or vegetable stock)


OPTIONAL ITEMS
Culinary grade dried rose petals
Oil packed anchovy fillets

 

THE RECIPES

Since you (hopefully) have all day to relax before the holidays are officially over, take advantage of this slow cooked recipe! It's super easy; just toss all the ingredients in the slow cooker and let it work it's magic for several hours.  Consider a double batch so you can pack it for lunch during the week ahead.
