I sincerely would love to meet the person that walked by the sharp, spiky green thing growing out of the ground and decided, “let’s try and eat this”. But honestly, I’ll eat them any which way they come—canned in brine, fresh from the market or packed in oil, I LOVE ARTICHOKES! To me, they scream spring and summer. It's always been a sign of warmer weather to me and brings back so many fond memories. My mom and I would sit out on the back porch, fresh artichokes in hand, clipping off the spiky barbs and hollowing out the fluffy chokes, readying them for their steamy baths. If you can’t get your hands on fresh ones right now, feel free to sub in artichokes packed in oil or brine. They’re a great addition to your pantry and a flavorful way to jazz up a routine meal!
