A Note From Lena Vergnes

A light, airy, melt-in-your-mouth texture is what you're going for in chocolate mousse. Whipping egg whites is what gives mousse the air bubbles so the texture can be what it is, but a vegan alternative is using aquafaba (the liquid from chickpeas), which when whipped mirrors the behavior of egg whites.
