Tex-Mex Recipes

When my husband and I made the long move from central Texas to NYC, there were a lot of new and exciting things on the horizon. We knew we would have some huge adjustment to make, including living in a busy city, getting used to snow and cold winters, and being far from family and friends. One thing we didn't realize we would miss so much was all of the Tex-Mex cuisine! Chile con queso, refried bean and cheese tacos, enchiladas, fajitas, breakfast tacos...I craved it all. Unfortunately there weren't many (if any) real Tex-Mex cuisines nearby, and I couldn't travel the nearly 2,000 miles back to Texas to get it. I began looking online for recipes to make at home, and while it wasn't always quite the same, it did satisfy some cravings and make me feel less homesick. For those of you with roots in the South/Southwest, are homesick Texans, or simply want to indulge in some Tex-Mex cuisine at home, here are some recipes to get you inspired and cooking!
