  • 1 pound short pasta, cooked according to package instructions
  • 1/2 red onion, diced
  • 1/2 cup fresh cilantro, chopped
  • 1 avocado, diced
  • 1 (15 ounce) can corn, drained
  • 1 (14.5 ounce) can Red Gold Petite Diced Tomatoes
  • 1 cup Red Gold Medium Salsa
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 3 tablespoons taco seasoning
  • 1/4 teaspoon kosher salt, plus more to taste
  • 1/4 cup lime juice

Method

  • Step 1

    In a large bowl, combine pasta, onion, cilantro and avocado.

  • Step 2

    Drain Red Gold petite diced tomatoes, and add to the bowl.

  • Step 3

    To make the dressing in a separate bowl, combine Red Gold salsa, sour cream, mayonnaise, lime juice, taco seasoning, and salt.

  • Step 4

    Whisk well. Pour over salad and toss well.

  • Step 5

    Refrigerate a minimum of 30 minutes before serving.
