Back to school and back to work means easy weeknight dinners are a must. Here are a few of our best and brightest!

THE GROCERY LIST
(the must-haves!)


1 bunch fresh thyme
2 bunches fresh basil
4-5 heirloom tomatoes
1 large piece fresh ginger
1 bunch fresh mint
1 cup fresh or dried figs
1 cantaloupe 
2 (12 oz) bags cups Frozen Riced Cauliflower 
2 pints cherry or grape tomatoes
1 lemon
1 bunch cilantro
1 yellow onion
1 green bell pepper
1 large beefsteak tomato
1 small head of romaine lettuce
3 (8 oz) balls burrata cheese 
1 (16 oz) container fresh whole milk ricotta cheese
8 oz grated parmesan cheese
1 (8 oz) ball Mozzarella cheese
1 (32 oz) container Greek yogurt
1 (8 oz) container prepared pesto (or make your own using this recipe!) 
1 (5 oz) package Prosciutto
8 slices deli american
3/4 lb thinly sliced ham 
3 chicken breasts
2 oz vodka (or replace with water)
1 (16 oz) jar kimchi 
1 lb Whole-Wheat Penne Rigate
1 lb short pasta of choice
1 (8 oz) jar fig spread or preserves
1 (8 oz) bag lentils
1 (16 oz) jar pitted kalamata olives
1 (32 oz) jar kosher dill pickles
1 (8 oz) jar banana peppers
4 Italian sub rolls

 

PANTRY ESSENTIALS
(things we assume you have,
but if not, stock up!)


flour 
2 sticks unsalted butter
salt and pepper
olive oil
1 dozen eggs
honey
garlic
tamari
balsamic vinegar
sesame oil
red pepper flakes
tahini 
red wine vinegar
dried oregano
maple syrup
milk
strong coffee or brewed espresso
cardamom
vanilla 


 

OPTIONAL
(things that will add great flavor but are not required)


chili paste or sriracha
sesame seeds
crisp / roasted seaweed
scallions
microgreens
chopped pistachios
melted chocolate

 

 
THE RECIPES
Heirloom Tomato Galette

Want the secret to flaky pie crust? Freeze your butter then grate it on a box grater. Also, use vodka instead of water to bind the dough together. Vodka doesn't promote gluten formation the same way water does so it will keep the pastry light and flaky. 
 

Feedfeed Tip Heirlooms are pretty much perfect right now, which means very juicy!  To keep your galette from getting soggy, add a little salt to the sliced tomatoes and let them sit in a colander for at least 30 minutes before adding them to the galette.

You can add any protein you'd like to this speedy dinner, but we love how quickly it comes together with just scrambled and fried eggs!

Feedfeed Tip Toss the pasta with the fig dressing while it's still warm so it has a chance to absorb all of the flavor. 
Garlicky Lentils and Tomatoes with a Soft Boiled Egg and Tahini-Honey Sauce by @what_she_ate

Never made lentils? You can buy them precooked but it will be more cost effective to buy them in bulk.  All you need to do is bring a pot of water to a boil, add the lentils, reduce to a simmer and cook for about 20 minutes.  Once tender, strain, season and serve! Make sure you add salt after they have cooked as adding it too early can prohibit lentils from cooking properly.
