ingredients
- 1 pound box pasta of choice
- 1 cup pesto, homemade or store bought
- 1/2 cup grated parmesan
- 1 pint cherry tomatoes, sliced in half
- 2 tablespoon fresh chopped basil, plus more for garnish
- 3 grilled chicken breasts, sliced
- salt and pepper, to taste
- pinch of red pepper flakes
- 2 ( 8 oz) balls burrata, torn by hand
- 2 tablespoon olive oil
Method
Step 1
Cook pasta according to package directions. Reserve 1/2 cup of the cooking water before straining the pasta. After draining the pasta, place it back into the pot.
Step 2
To the pasta, add pesto, the reserved pasta water, and parmesan. Mix until well combined, then add cherry tomatoes and fresh basil.
Step 3
Add sliced chicken breast into the pasta and toss to combine. Season to taste with salt, pepper and red pepper flakes.
Step 4
Transfer to a platter and top with burrata and basil. Drizzle with olive oil and serve.
