ingredients

  • 1 pound box pasta of choice
  • 1 cup pesto, homemade or store bought
  • 1/2 cup grated parmesan
  • 1 pint cherry tomatoes, sliced in half
  • 2 tablespoon fresh chopped basil, plus more for garnish
  • 3 grilled chicken breasts, sliced
  • salt and pepper, to taste
  • pinch of red pepper flakes
  • 2 ( 8 oz) balls burrata, torn by hand
  • 2 tablespoon olive oil

Method

  • Step 1

    Cook pasta according to package directions. Reserve 1/2 cup of the cooking water before straining the pasta. After draining the pasta, place it back into the pot.

  • Step 2

    To the pasta, add pesto, the reserved pasta water, and parmesan. Mix until well combined, then add cherry tomatoes and fresh basil.

  • Step 3

    Add sliced chicken breast into the pasta and toss to combine. Season to taste with salt, pepper and red pepper flakes.

  • Step 4

    Transfer to a platter and top with burrata and basil. Drizzle with olive oil and serve.
