Vegan Sriracha Chili Cheese Sauce

  • 1 cup cashews, boiled and drained
  • 1 garlic clove
  • 3 tablespoons nutritional yeast
  • 1/2 cup paprika
  • 1/2 teaspoon turmeric
  • 1/2 cup warm water
  • Kosher salt and freshly ground black pepper, to taste
  • 3 tablespoons Lee Kum Kee Sriracha Chili Sauce
  • 1/4 cup vegan shredded cheese

Nachos

  • 3 tablespoons Olive oil (or avocado oil), to drizzle
  • 1 (340 gram) package vegan ground meat
  • Kosher salt and freshly ground black pepper, to taste
  • 1/2 black beans, rinsed and drained
  • 1/2 can whole kernel corn, rinsed and drained
  • 1 can sliced black olives, rinsed and drained
  • 1 medium red bell pepper, seeded and diced
  • 3 whole green onions, diced
  • 1 (350 gram) bag tortilla chips
  • Shredded vegan cheese, for topping
  • Dried oregano, to taste for topping

Method

  • Step 1

    Line a sheet tray with parchment paper and set aside.

  • Step 2

    Heat a medium-sized pan with avocado or olive oil on medium heat. Add the vegan ground meat into the pan and break it up into small pieces with a silicone spatula. Add in salt and pepper to taste. Cook for about 5 minutes or until browned. Set aside.

  • Step 3

    Boil 1 cup of water with 1 cup of cashews for 10 minutes. Set aside.

  • Step 4

    In a blender, add in your boiled and drained cashews along with the clove of garlic, nutritional yeast, paprika, turmeric, warm water, Lee Kum Kee Sriracha Chili Sauce, and shredded vegan cheese. Blend until creamy. Season well with salt and pepper. Place the sriracha chili cheese sauce in a small bowl and set aside.

  • Step 5

    On the parchment-lined sheet tray, spread out the tortilla chips in an even layer. Top the tortilla chips with vegan ground meat, black beans, corn, olives, red pepper, cheese, and dried oregano.

  • Step 6

    Set the oven to broil, and then place the nachos in the oven for 2-5 minutes. Remove from the oven when the cheese melts and tortilla chips start to brown.

  • Step 7

    Top with diced green onions before serving. If desired, spread dollops of the vegan sriracha Chili cheese sauce over the nachos before enjoying, or leave aside in a bowl for dipping.
