  • 1 tablespoon unsalted butter
  • 3 garlic cloves, minced
  • 1 jalapeño, sliced horizontally, plus more for garnish
  • 1/2 small onion, finely chopped
  • 1 can Red Gold Tomato Love Original Diced Tomatoes + 2x More Green Chilies
  • 2 tablespoons Red Gold Diced Tomatoes
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • Kosher salt and black pepper, to taste
  • 1 1/2 cups unsweetened coconut milk
  • 8 ounces shredded yellow cheddar cheese
  • Avocado sliced, for garnish
  • Cojita cheese, for garnish
  • Cilantro, chopped, for garnish
  • Salsa, for serving
  • Guacamole, for serving
  • Tortilla chips, for serving


  • Step 1

    In a saucepan, heat butter over medium heat, add garlic, jalapeño, and onion. Cook for 1-2 minutes.

  • Step 2

    Add Red Gold Tomato Love Original Diced Tomatoes + 2x more Green Chilies as well as and 2 tablespoons Red Gold Diced Tomatoes. Mix and bring to a simmer.

  • Step 3

    Slowly add coconut milk with one hand while simultaneously continuing to whisk with the other. Bring to a boil, then reduce heat to a simmer.

  • Step 4

    Add chili powder, cumin, and season with salt and pepper. Mix and allow to cook for 6-7 minutes.

  • Step 5

    Add cheese and mix until melted and dip is smooth. Remove from heat.

  • Step 6

    Garnish with avocado, crumbled cojita cheese, jalapeño, and cilantro. Serve with salsa, guacamole, and tortilla chips.
