ingredients
- 1 tablespoon, olive oil
- 1- 1 1/2 pounds lean ground beef
- 1 (10-ounce) can Red Gold Original Diced Tomatoes with Green Chilies, drained
- 1 tablespoon Red Gold Roasted Garlic Tomato Paste
- 4 chipotles in adobo sauce, chopped
- 1 tablespoon taco seasoning
- 1/3 cup fresh chopped cilantro
- 2 cups oil, for frying
- 8-10 corn tortillas
- Shredded lettuce, for topping
- Diced tomatoes, for topping
- Shredded Mexican blend cheese, for topping
- Guacamole, for topping
Method
Step 1
Heat a large saucepan over medium-high heat with the frying oil. Once hot, use stainless steel tongs to place the corn tortillas in the frying oil and bend them into a taco shape. Fry for about 2-3 minutes, working with 1-2 tortillas at a time.
Step 2
Once crispy and deeply golden, remove from the oil and place on a paper towel-lined baking rack to drain excess oil.
Step 3
In a large skillet over medium-high heat, add the olive oil.
Step 4
After a minute, add the ground beef and break it up with a spatula. Cook until browned, about 6-8 minutes.
Step 5
Stir in the drained diced tomatoes and tomato paste.
Step 6
Add the chopped chipotles and taco seasoning. Cook for another 2-3 minutes. Season with salt and black pepper to taste. Stir in the chopped cilantro and set aside.
Step 7
Serve the chipotle beef in the crispy hard-shell tacos with your favorite taco toppings.
