ingredients
- 4 boneless, skinless chicken breast
- 1 can Red Gold Petite Diced Tomatoes
- 2 cans Red Gold Tomato Love Original Diced Tomatoes + Green Chilies
- 1 1/2 teaspoons chicken bouillon
- 1 1/2 teaspoons garlic powder
- 1 1/2 teaspoons onion powder
- 1 1/2 teaspoons dried cilantro
- 1 tablespoon kosher salt
- 8 Torta bread or French rolls
- Chopped tomato, for topping
- Sour cream, for topping
- Shredded cheese, for topping
- Chopped onion, for topping
- Shredded lettuce, for topping
Method
Step 1
In a pot bring 6 cups of water to boil. Season the water with chicken bouillon, garlic powder, onion powder, dried cilantro, and salt. Add chicken breast and cook for 35 minutes (until fork tender).
Step 2
Once the chicken is cooked, allow to cool for a few minutes before shredding.
Step 3
In another pot, add 1 can of Red Gold Petite Diced Tomatoes and 2 cans of Red Gold Tomato Love Original Diced Tomatoes + Green Chilies. Add shredded chicken to the pot.
Step 4
Toast tortas on both sides brushed with olive oil.
Step 5
Lastly, assemble tortas with cheese, chicken, sour cream, lettuce, onion and tomato.
