A Note From Lena Vergnes

Lightly seared in brown butter atop a bed of greens is my favorite scallop preparation, but there are many ways to cook these delectable bivalves. When given the choice between sea scallops or bay scallops, I would go for bay as they are smaller in size, more tender, and a tad sweeter, but sea scallops are just as good if that is what is available near you.
