- 1 bag Success Rice Boil-in-Bag Brown Rice
- 2 pints grape tomatoes, halved
- 3 garlic cloves, minced
- 1 small onion, sliced
- 3 tablespoons olive oil
- 1 teaspoon kosher salt
- 1 teaspoon ground black pepper
- 1/4 cup cotija or feta cheese
- 2 tablespoons fresh cilantro, chopped
Method
Step 1
Prepare Success Rice Boil-in-Bag Brown Rice according to package directions. While rice is cooking, preheat your oven to 450ºF and line a baking sheet with parchment paper.
Step 2
In a medium mixing bowl, add tomatoes, garlic and onion. Next, add oil, salt and pepper to the vegetables and mix to combine.
Step 3
Spread seasoned vegetables onto your baking sheet and roast for 20-25 minutes.
Step 4
Serve roasted vegetables over rice and top with cotija and cilantro.
