Comforting soup and hearty one-pot wonders, this week's menu is all about cozy fall cuisine!

THE GROCERY LIST
(the must-haves!)

1 (small) lemongrass stalk
2 limes
1 bunch celery
3 carrots
2 large onions
2 red onions
1 pound seedless red grapes
1 yellow squash
1 small zucchini
1 green bell pepper
3 tomatoes
2 large butternut squash
8 ounces mushrooms
1 bunch fresh cilantro 
1 bunch fresh basil
1 bunch fresh rosemary
1 bunch fresh thyme
1 pound firm tofu 
2 quarts vegetable stock
1 quart beef bone broth
1 (14.5 ounce) can coconut milk
1  quart unsweetened almond milk
2 chicken breasts (about 10 oz. total)
1 pound beef stew meat, diced into small chunks
1 (10 ounce) packet ramen noodles
1 pound split red lentils
1 pound box large pasta shells
1 (16 ounce) pack raw cashews 
1 (8 ounce) container panko breadcrumbs
1 box natural brown rice crisp cereal 
1 (8 ounce) can tomato sauce
3 (15 ounce) cans diced tomatoes
1 (6 ounce) can tomato paste
1 bottle Gochujang
1 tube ginger garlic paste
1 (5 ounce jar) red curry paste
1 (8 ounce) jar nutritional yeast
1 small container ras el hanout spice
1 (12 ounce) jar brown rice syrup
1 (16 ounce) bag raw or coconut sugar
1 (8 ounce) container raw cacao powder
4-6 slices Deli American
8 ounces crumbled feta

PANTRY ESSENTIALS

1 loaf of bread

(things that will add great flavor but are not required)

For when you are craving ramen but need something in between the packet you ate in college and a three-day homemade rendition! This broth comes together quickly and you can customize the toppings with whatever you happen to have on hand. We vote for the addition of a soft-boiled egg!

Feedfeed Tip When using whole spices and aromatics such as bay leaf to add flavor to soups and stews, be sure to remove them at the end of the cooking process. We like to tie a bit of butcher's twine to the pot lid to help us remember this vital step. 
Red Lentil and Coconut Curry Soup  by @cupcakeree

Creamy, slightly spicy and packed full of fiber-rich lentils, this soup has it all!  This recipe is made in an electric pressure cooker to save time, but if you do not have one you can make it on the stove top; just cook the lentils until tender before blending.

'Cheesy' Butternut Squash Mac & Cheese by @lindseyeatsla

This mac & cheese has a not so 'cheesy' secret; it's dairy-free! Yep, the creamy sauce is made from roasted butternut squash and cashews and trust us, it's just as good as the real thing.

Feedfeed Tip When making a dairy-free cream sauce, it's important to play around with the balance. We usually find the final result needs a little lift from something spicy and something acidic so don't be afraid to add a little lemon juice or a pinch of cayenne pepper until you are happy with the end result!

Feedfeed Tip To add a little extra flavor to this dish, try using roasted grapes instead of fresh. Roasting the grapes will enhance the sweetness and concentrate the flavor.

Spiced Beef and Butternut Squash Stew by @thedaleyplate

This recipe is also made in an electric pressure cooker but you can certainly cook it in an oven safe dutch oven instead! Just bring the braising liquid and beef to a simmer then cover and place in a 325˚F oven for about 2 hours, or until the beef is tender.

Feedfeed Tip This stew is seasoned with ras el hanout, a North African spice blend consisting of warming spices like cardamon, cloves, mace, cinnamon, ginger, paprika and cumin. In this recipe it pairs nicely with the sweetness from the butternut squash.
