THE GROCERY LIST

6 onions
1 bunch celery
1 head garlic
1 knob fresh ginger
1 head cauliflower
3 pounds jumbo carrots
1 bunch cilantro
3 jalapeño peppers
1 mango
1 avocado
1 blood orange
1 red onion
2 (5 ounce) containers baby spinach
1 bunch fresh parsley
1 bunch fresh thyme
1 lemon
1 lime
1 small sweet potato
1 (10 ounce) bag frozen peas
12 ounce bag cauliflower rice (fresh or frozen)
1 small jar red curry paste
3 quarts vegetable broth
1 (14.5 ounce) can diced tomatoes
1 (15 ounce) can pumpkin puree
1 (15 ounce) can chickpeas
1 (14.5 ounce) can full fat coconut milk
16 ounces yellow lentils
16 ounces black or green lentils
6 boneless skinless chicken breasts
1 bottle BBQ sauce of choice
1 pint heavy cream
1 quart chicken broth
16 ounce package potato gnocchi
1 bottle green hot sauce
1 dozen eggs

Weeknight chicken meets tropical vacation by way of this bright and vibrant mango salsa.  While you are grilling the chicken breast, grill up the remaining two you purchased, sans BBQ sauce (it will give you a big leg up tomorrow).

Feedfeed Tip  Be sure to plan ahead and marinate your chicken at least four hours in advance of cooking. Better yet, get it all set up Sunday so meal time is that much easier come Monday.

Feedfeed Tip When cooking lentils be sure to salt them at the end of the cooking process. Salting them too early can prevent them from softening.

Green eggs, no ham. However, we wouldn't hate a side of bacon with these beauties! If you have leftover green harissa from last night, feel free to add it to this shakshuka for a nice kick.
