Miami Chef's Table Dinner With the Mother Hens of Handsome Brook Farm

 #TeamFeedfeed spends a lot of time cooking at the test kitchen, but a few weeks ago we flew down to the eclectic and vibrant city of Miami to host a dinner with the official egg sponsor of FeedfeedBrooklyn, the one, and only Handsome Brook Farm. The beautiful summer-inspired dinner was designed by Chef Soraya Kilgore and Chef Janine Booth, both Handsome Brook Farm 'Mother Hens' who really know and love their eggs! The dinner was held at Chef Soraya Kilgore’s upscale casual restaurant, Alter, with the most gorgeous industrial-chic interior located in colorful and artsy Wynwood.

Our summer-inspired dinner with the talented and passionate ‘Mother Hens’ in Miami was held at Alter.

At Handsome Brook Farm, the 'Mother Hens' are the foundation of their business. The 'Mother Hens' of the pasture produce superior eggs thanks to the high-quality, organic food they are fed, the space they have to roam (108 square feet!) and lots of fresh air and sunshine. Happier hens produce more delicious eggs. The 'Mother Hens' of the industry are a group of hard-working, talented and passionate women in food who are spreading the good word (and food!) of all that Handsome Brook Farm Pasture-Raised Organic Eggs have to offer.

Guests kicked off the evening with beautifully crafted cocktails, and were then escorted into the dining room, where they began their meal by indulging in the signature dish at Alter: an expertly prepared Handsome Brook Farm Pasture-Raised Organic Soft Egg with Sea Scallop Espuma with Truffle Pearls and Siberian Caviar.

To kick things off guests enjoyed choices between two drinks in the alfresco bar. First was the Handsome Devil made with gin, blueberry jam, cardamom and Handsome Brook Farm egg whites garnished with a lemon peel. Bright pink and floral, this drink was perfect for the sunny evening. Second, was the Huevos Rancheros made with tequila, passion fruit, mint, lime, habanero and Handsome Brook Farm egg whites garnished with edible flowers. Tart, fruity, with a slight kick from the chilis --  a personal favorite!

The dinner was designed by Chef Janine Booth and Chef Soraya Kilgore, both Handsome Brook Farm ‘Mother Hens.’

After cocktails, guests were escorted to a beautiful dining room inside the restaurant for dinner. The first course, made by Chef Soraya Kilgore, was a Handsome Brook Farm Pasture-Raised Organic Soft Egg, the signature dish at Alter and with good reason. The luscious Sea Scallop Espuma with Truffle Pearls and Siberian Caviar was outstanding and we all wished they served seconds! This was served with a warm house-made Bread with a sumac and dill seed crust and umami butter.

Guests also enjoyed dishes like Sugar Snap Pea & Brussels Sprouts Caesar Salad (top left), “Steak n’ Eggs” made with braised short rib (top right), Grilled Asparagus (bottom right), and Sweet Corn Spoon Bread (bottom left). Handsome Brook Farm Pasture-Raised Organic Eggs were uniquely incorporated into each dish.

The second course, made by Chef Janine Booth, was a Sugar Snap Pea & Brussels Sprouts Caesar Salad with a Handsome Brook Farm Pasture-Raised Organic five minute egg, sourdough croutons and shaved Parmesan. This is a salad that we are going to have to try and recreate because it was just that good! 

The main course, also made by Chef Janine Booth, was a feast with a plated play on "Steak n' Eggs" made with braised short rib, Handsome Brook Farm Pasture-Raised Organic sunny side up eggs, tomato jam and chives. There were also shared sides like Grilled Asparagus with Meyer Lemon Hollandaise made with Handsome Brook Farm Pasture-Raised Organic eggs and Florida Citrus and the most gooey Sweet Corn Spoon Bread that was enriched with Handsome Brook Farm Pasture-Raised Organic egg yolks + leavened with whipped Handsome Brook Farm Pasture-Raised Organic egg whites, cheddar, creme fraiche & scallions.

To finish things, guests enjoyed a Tropical Semifreddo Maracuya, a coconut meringue made with Handsome Brook Farm Pasture-Raised Organic eggs, tropical fruit compote, and basil. The best way to end a truly fantastic meal!

The meal concluded with a Tropical Semifreddo Maracuya, which was served for dessert (bottom left). All who attended were amazed to see the creativity these chefs brought to the table. To make the evening even more magical, guests took home gift bags filled with some amazing goodies, and of course, posed for tons of photos and boomerangs with our signature Handsome Brook Farm egg!

We had the best time with Handsome Brook Farm. We are so grateful for the warm welcome and hospitality provided by Alter, and the immense talent shared by Chef Soraya Kilgore and Chef Janine Booth towards all who attended. It was amazing to experience the creativity these chefs brought to the table, and the passion and commitment they expressed through bringing these egg-centric dishes to life. At the end of the evening, guests got to enjoy taking photos and boomerangs with our giant Handsome Brook Farm egg and took home some amazing gift bags thanks to Ballarini and Handsome Brook Farm!
