4 cups Earthbound Farm riced cauliflower, steamed and cooled
1 cup coconut milk
1 cup coconut oil, melted
2 cups chocolate chips, melted
1 cup maple syrup
2 cups hazelnuts, roasted, skinned and ground
1 1/2 cups coconut flour
1 cup unsweetened cocoa powder
1 tsp espresso powder
1 teaspoon baking powder
1/4 teaspoon sea salt
optional: extra whole hazelnuts (roughly chopped), extra chocolate chips to add on top before baking, Dairy Free Ice Cream, Chocolate Magic Shell
Preheat oven to 350˚ F and line a 9 x 13 inch pan with parchment paper.
Steam cauliflower rice according to package directions, and then strain in a large bowl lined with a clean tea towel. Remove any excess moisture from the cauliflower, and set aside to cool completely.
In a medium sized bowl, whisk together the coconut milk, coconut oil, maple syrup, melted chocolate and eggs. Set aside.
In a large bowl, whisk together the hazelnuts, coconut flour, cocoa powder, espresso powder, baking powder and sea salt.
Add the wet ingredients to the dry, folding to combine. Stir in the cooled cauliflower rice. Pour batter into prepared pan (topping with extra hazelnuts and chocolate chips, if desired) and bake for about 40-50 minutes or until set.
