Veggie Sandwich with Sundried Tomato Hummus

Serves 2

Ingredients

4 Slices of gluten-free bread

Handful of Mixed Greens Lettuce

½ Cucumber

½ Avocado

½ Tomato

2 T Sundried Tomato Hummus

Handful of Sprouts

Method

Toast the four slices of gluten-free bread.

On two halves, spread the sundried tomato hummus. And the other two halves, spread the avocado.
