One of the many winter squash varieties, acorn squash has a sweet nutty flavor that is enhanced when roasted. One of the most popular ways to use acorn squash is to stuff it, since when cut in half it has a bowl shape. Adding some sweetness like brown sugar or maple syrup also brings out the complexity of flavor in this squash, and pairs nicely with some herbs like thyme and rosemary.
