ingredients
- 1 tablespoon olive oil
- 1 onion, diced
- 1/2 cup bell peppers, chopped
- 1 (14.5 oz can) Muir Glen Fire Roasted Crushed Tomatoes
- 2/3 cup white rice
- 1/2 cup chicken broth or water
- 1/2 teaspoon garlic salt
- Salt, to taste.
- Pepper, to taste.
- 3/4 cup mozzarella cheese and cheddar cheese blend
Method
Step 1
Preheat oven to 375°F.
Step 2
In a large saute pan, heat olive oil on medium high heat. Add the diced onion and bell peppers and cook until soft.
Step 3
Add the crushed tomatoes and mix well.
Step 4
Transfer the mixture to a baking dish, then mix together with rice, chicken broth, garlic powder, salt, and pepper. Sprinkled with the cheese blend and cover with aluminum foil.
Step 5
Bake for 35-40 minutes, until the rice is fully cooked, then remove the foil and let bake for another 5 minutes. Serve immediately.
