A Note From Emily Arden Wells

As we get further into winter, the days short and cold, I always turn to Tiki cocktails to instantly transport myself to a far flung island where pineapples and rum dominate, and where shoes aren't always required. This winter is no different, and a coconut filled with rum is always a lovely escape from the mid-winter doldrums. I hope this feed inspires your cocktail hour to take a tropical twist!

island sunrise: Happy Friday everyone! This delicious summer cocktail is a romantic vacation for your tastebuds! Two ounces of white rum is mixed with pineapple juice, freshly squeezed orange juice, and cream of coconut, giving this tropical treat a silky smooth texture and a rich coconut flavor. Shaken vigorously and poured into a tall glass, this creamy and refreshing beverage is then topped with a splash of grenadine for a stunning red ombré color, a few clinking ice cubes, and freshly grated nutmeg. In seconds, what emerges before your eyes looks like a majestic rising sun, hence its fitting name. You might even need sunglasses. Spiced Pineapple Tequila And Sherry Swizzle

#TikiTuesday! Mixing up more of these bad boys 'cause that pineapple on my counter isn't getting any younger, and my tequila's not gonna drink itself. Recipe: 1 oz tequila 1 oz fino sherry 2 oz fresh squeezed/strained pineapple juice.5 oz fresh squeezed/strained lime juice.5 oz allspice syrup (easy recipe below) 2 dashes angostura bitters pinch of salt club soda Combine all but the soda in a cocktail shaker with ice. Shake and pour into a tall glass filled 3/4 with crushed ice. Top with club soda, garnish with pineapple leaves or a swizzle stick. ALLSPICE SYRUP: 1/2 cup sugar 1/2 cup water 15 crushed allspice berries (most grocery stores have them with the baking spices) Combine all in a saucepan and bring to a simmer over medium heat. Sit until sugar is dissolved, then remove from heat and let cool, covered. Strain and store in fridge until ready to use.

Birthday drinks are under way (well I guess they started with mimosas this morning!) Testing a cocktail for tomorrow's @makeshiftsoc Tiki party and I think we have a winner, hopefully it pairs well with our birthday rum cake from @craftsmanwolves! Recipe: 2 1/2 oz @appletonestateusa Reserve 3 oz pineapple juice 1 oz orange juice 2 oz coconut milk 1/2 oz passion fruit syrup Dash tiki bitters Dash cinnamon Dash nutmeg Shake all ingredients in a cocktail shaker and serve over ice. Garish with a few pineapple leaves.

Day 210 of 365 Day Cocktail Challenge Recipe: 1.50 oz Dewars Scotch 1.50 oz 151 Lemon Hart Rum Chai tea mix.75 oz fresh lemon juice.50 oz Tempus Fugit Creme de Cacao.50 oz Honey simple syrup 3 oz Hot water 1 pat Thursday Cottage Brandy Butter Garnish: Orange Rosette with cloves & opened vanilla pod. Oh, the weather outside is frightful...So, it seemed like a good time for a mash-up of two of my favorite hot drinks: The Blue Blazers & the Hot Buttered Rum. We owe many thanks to the Professor, Jerry Thomas for the Blue Blazers and the Tiki world for popularizing the Hot Buttered Rum. But, since I'm not pouring the drink on fire between two glasses, I needed to find an acceptable compromise...this is my solution. The Chai mix sits on top along with the brandied butter. The bottom glass houses the Scotch, Rum, Creme de Cacao, Honey Simple syrup along with the Orange rosette, vanilla pod & cloves. Pour Hot water over the top and enjoy! Cheers!

Recipe: Created by Daniele Dalla Pola of Nu Bar Lounge via Gastronomista 2-2/3 oz BACARDÍ Gold 1/4 oz Ginger Syrup 1 oz Coconut Cream 1-1/3 oz Coconut Water 2 oz Fresh Pineapple Juice 1/2 Lime - Juiced Shake with ice in a cocktail shaker. Strain into a carved out Pineapple filled with ice. Top with a few dashes of Angostura Bitters, a dash of fresh nutmeg, and a pinch of Salt. Garnish with a cocktail umbrella, a few pineapple leaves, a fresh orchid, and a festive straw.
