- 1/4 cup turbinado or cane sugar
- 2 tablespoons freshly squeezed minneola juice
- 1 star anise
- 1 clove
- 1 cinnamon stick
- 1 3-inch strip minneola peel
Spiced Minneola Syrup
Method
Step 1
Add ¼ cup water, sugar, minneola juice, star anise, clove, cinnamon, and minneola peel to a small skillet.
Step 2
Bring to a boil, then immediately reduce heat to low and simmer until the sugar has dissolved, about 5 minutes, stirring periodically.
Step 3
Once dissolved, remove from heat and allow syrup to sit for 20 minutes. Strain syrup through mesh sieve into a mason jar or airtight container. Place cinnamon stick in syrup jar, as well. You can make this ahead of time. Chill until ready to use.
Minneola Paloma
Step 1
Add zest of half the minneola to turbinado sugar. Rub between your fingers until fragrant. Coat rim of a highball glass with lemon juice. Roll in minneola sugar.
Step 2
Add tequila, 2 teaspoons Spiced Minneola Syrup, 2 teaspoons minneola juice, lemon juice, and club soda to glass. Fill remainder of glass with ice. Stir with a cocktail or latte spoon to combine. Garnish with a skewered minneola peel. Serve chilled.
