ingredients

  • 6 pineapple rings
  • 1/2 cup water
  • 1/2 cup light brown sugar
  • 2 ounces grilled pineapple syrup
  • 2 mint leaves
  • 1 ounce fresh lime juice
  • 4 ounces dark rum
  • 6 ounces club soda

Method

  • Step 1

    For the Grilled Pineapple Syrup: Grill 4 pineapple rings for 3-5 minutes per side, until you get a good char. In a small saucepan at medium low heat, add water and brown sugar. Stir until all sugar is dissolved. In a bowl, muddle 4-5 grilled pineapple rings and add rings and juice to saucepan. Cook for about two more minutes. Remove from heat and let cool. Then strain the syrup and store in the refrigerator for up to a week.

  • Step 2

    For the Grilled Pineapple Mojito: Take the remaining pineapple ring and cut into 6 pieces. Muddle the lime juice, 2-3 grilled pineapple chunks in each glass and mint in a Collins glass.

  • Step 3

    Add ice cubes. Pour in pineapple syrup, rum, and top with club soda. Garnish with pineapple leaf/spike.
