Chicken Paillard


Pittsburgh Salad



2 large sweet potatoes, cut lengthwise into 1/2-inch wedges
2 tablespoons extra virgin olive oil
1/2 teaspoon sea salt
1/2 fresh ground pepper
1 Earthbound Farm BBQ Ranch Chopped Salad Kit
2 Chicken Breast (prep 1 on camera as shown here)
1 teaspoon sweet paprika
1/1 teaspoon chipotle powder
Kosher salt
Canola oil



1 avocado sliced
Grated cheddar or crumbled blue cheese



Preheat oven to 425°F, line a baking sheet with parchment paper and add sweet potatoes and drizzle with olive oil, salt, and pepper. spread the wedges into a single layer on your prepared baking sheet. bake for 30-35 minutes, stopping halfway through to flip them over and bake until cooked through and the edges are slightly browned.

Empty the contents of the Earthbound Farm BBQ Ranch Chopped Salad Kit  into a Salad Bowl and toss with the dressing. Set Aside.

Remove sweet potatoes from the oven.

Season chicken with spices, salt and pepper. Heat olive oil plus 1 tablespoon butter in a large skillet over medium-high heat until butter melts and begins to foam a little. Add chicken and saute on one side until golden brown, about two minutes. Reduce heat to medium. Flip, and saute chicken until cooked through, about two more minutes. Transfer to a dinner plate.

Add tossed Earthbound Farm BBQ Ranch Chopped Salad , sweet potatoes, avocados, and cheese on top of the chicken. Enjoy!
