Avocado lovers, you're in luck. This week's meal plan has no shortage of this wonderful green fruit, so make sure to stock up on avocados at all stages of ripeness. Before you know it, you'll have made it to the weekend and there's a rich chocolate dessert with your name all over it. Happy cooking!

THE GROCERY LIST

7 ripe avocados
1 large clamshell salad greens
Fresh shoots
1 bunch radishes
2 sweet potatoes
1 red onion
1 red cabbage
1 bunch scallions 
1 bunch cilantro
2 small red chilis
1 lime
2 tomatoes
1 lemon
1 medium cucumber
1 medium spaghetti squash
1 yellow onion
Nori sheets
1 1/2 cups uncooked red lentils
2 cups cooked brown rice
1 (15-oz.) block tofu
1 pkg vegan cream cheese 
1 loaf whole wheat bread
2 (15-oz.) cans diced tomatoes
1 (28-oz.) can of fire-roasted tomatoes
1 can tomato paste
1 (15-oz.) can chickpeas (for aquafaba)
4 ounces 70% cacao dark chocolate
1 can coconut cream

Spaghetti Squash with Tomato Basil Sauce

Trying to find new and delicious ways to use up those fresh summer tomatoes? Turn them into a quick and easy sauce to spoon over luscious spaghetti squash noodles.

Feedfeed Tip To cook the spaghetti squash, you can either halve the squash lengthwise, brush with olive oil, and bake cut-side down for 35-45 minutes, or you can use a fork to prick holes in the squash and microwave it for about 10 minutes (rotating once halfway through).
