- 4 nori sheets
- 2 cups cooked brown rice
- 1 medium cucumber, sliced
- 2 avocados, sliced
- 1 (15-oz.) block tofu, sliced and baked
- 1 cup spinach leaves
Cut a square of cling film slightly larger than your nori sheets. Place the nori sheets on top with the shiny side down and rotated 45 degrees in relation to the cling film.
Wet your hands and grab a handful of rice. Place it in the middle of the sheets and form it into a compacted square.
Place the remaining ingredients on top. Cover all the ingredients with another layer of compacted rice.
Seal all 4 corners of the nori sheet on the top of the filling (like an envelope)
Finally gather all the cling film over the stack and tie on the top. Cut in half with a sharp knife and enjoy!
