Preserving our fruit and vegetables at the season’s peak not only helps us enjoy the harvest (or market haul) for a little longer, but also introduces a whole new world of flavours, textures, and sometimes even nutrients. Jams and chutneys can seriously transform a cheese platter, while fermented foods such as sauerkraut and kimchi are often more nutritious than the ingredients that made them. Have you ever thought of making ice cream from highly perishable summer fruit as a way of preserving those summer flavours for just a little longer? This feed will showcase beautiful traditional recipes along with new ideas, experiments, and unusual ways to preserve food from the amazing #feedfeed community. Enjoy!

How to make CHILI GARLIC OIL (Sa Tế Ớt Tỏi)? I think you guys have been asking me for this chili garlic oil recipe ever since i first posted on IG! And I finally got around to it now, more than a year later? that's some master level procastination for ya? I always have a big jar or two sitting in the fridge. A spoon of this umami yumminess makes everything so much tastier!! I put it in soup, stir fry, noodles, stew, fried rice, all kind of sauce, grilled meat and seafood... This lasts in the fridge for a long while so make a big batch! #RECIPE (1 pint sized mason jar) 1 cup peeled garlic minced 6 med size shallots minced 1/2 cup bird's eye chilies finely minced 1/3 cup Thai chili powder (Maesri brand, fine ground) 1+1/4 cup flavorless oil 1.5 tbsp sugar or honey (i use sugar in the raw) 1 tbsp premium fish sauce or tamari (i use red boat brand) I use my little kitchenaid chopper to mince everything! Heat oil over medium heat. Once oil is hot, add in minced shallots and stir well. Add in minced garlic. Slowly and constantly stir the mixture so it's cooked evenly. When garlic and shallot are somewhat caramelized and turn slightly golden, lower the heat and add in minced chilies. Cook for 2 mins. Turn heat to the lowest setting and add in chili powder, sugar and fish sauce. Stir to combine. Cook for 1 min or until the mixture slightly thickens, then turn off heat. Let rest in the pan til the mixture is completely cool. Transfer to a clean glass jar. Store in the fridge.
